ROASTED HONEY SWEET POTATOES
Preheat oven to 375°. Peel and cut 6 medium sweet potatoes into 1-in. cubes; place in a large bowl. Whisk together ⅓ cup honey, ¼ cup olive oil, 1½ tsp. salt, 1½ tsp. ground cinnamon and ½ tsp. pepper; add to the potatoes and toss to coat. Transfer to a greased 15x10x1-in. baking pan. Roast until tender, 45-50 minutes, stirring once.
Makes 12 servings.
