When winter gears up, my slow cooker rarely gets a rest. Ask my family what our go-to slow cooker meal is, and their answer will be swift and declarative: Where’s the Beef.
I first tried the dish—and got a kick out of its silly name—years ago during a summer adventure in Texas. I spent a couple of years experimenting until I finally landed on the right blend of ingredients that turns a simple beef chuck roast into tender, tangy sandwiches. Where’s the Beef (below) has since been my standard for gatherings year-round because, I’m proud to say, it’s pretty delicious.
