CHICKEN CHOW MEIN
SERVES 4 PREP 20 MINS COOK 10 MINS
• 2 tbsp peanut oil • 2 garlic cloves, crushed • 1 long red chilli, thinly sliced, plus extra to serve • 500g chicken breast fillets, sliced • 3 cups Chinese cabbage, shredded • 1 carrot, julienned • 3 green onions, thinly sliced, plus extra to serve • 160g pkt chow mein sauce • 85g chow mein noodles • ½ cup bean sprouts • ¼ cup cashews, toasted, chopped 1 In a wok or large frying pan, heat oil on high. Stir-fry garlic and chilli 10 secs. Add chicken and stir-fry 4-5 mins until golden.
2 Toss cabbage, carrot and onions through and stir-fry 1-2 mins until cabbage begins to wilt. Add sauce and stir-fry 1 min.
