SAUSAGE PASTA BAKE

500g penne pasta1 tbsp olive oil1 red onion, halved, thinly sliced500g Italian sausages, casings removed,small chunks500g jar tomato pasta sauce250g punnet cherry tomatoes, halved¼ cup torn basil leaves, plus extra smallleaves to serve½ x 180g punnet bocconcini, tornmixed salad, to serve
1 Preheat oven to moderate, 180°C. Lightly grease 4 x 2-cup ovenproof dishes.
2 In a large saucepan of boiling salted water, cook pasta following packet instructions. Drain well. Return to pan.
3 Meanwhile, in a large frying pan, heat oil on high. Saute onion 2-3 minutes until softened. Add sausage pieces and cook 5-6 minutes, breaking up lumps.
4 Add sausage mixture to pasta in pan with pasta sauce, cherry tomatoes and basil.…
