I am often asked what makes a great Women’s Weekly interview or story. Of course, the subject or the person we’re talking to is important, but really it comes down to one key ingredient: Authenticity. And this issue has it in spades, starting with our cover girl, Dame Judi Dench, whose endearing honesty and warmth is matched only by her wicked sense of humour (page 20). In 2019 I was 28 and at a crossroads in my career. I was teaching at a school in seaside Clovelly, in Sydney, not far from where I grew up, but I felt it was time to look for the next challenge, to step outside my comfort zone and fulfil a dream of working somewhere rural or remote. Roasted chicken breast with pear & fennel salad SERVES 4 PREP & COOK TIME 30 MINUTES 30g unsalted butter1 tablespoon extra virgin olive oil4 large free-range chicken breasts, skin and wing bone attached¼ cup (60ml) verjuice1 small fennel bulb2 packham pears, halved, cored, sliced thinly1 bunch rocket½ cup flat leaf parsley leaves1 tablespoon verjuice, extra2½ tablespoons extra virgin olive oil, extra 1 Preheat the oven to 220°C (200°C fan-forced). 2 Heat the butter in a large frying pan over medium high until nut brown, add the olive oil. SLEEPING Dogs had some kind of a release in Australia. I was sent over to do publicity for it. I’d never done anything like this before in my life, and I found myself, at one point, on Australia’s most watched current affairs program, talking to Mike Willesee. Boy, was I out of my depth.
