Cheesy gnocchi French onion soup
SERVES 4 PREP + COOK TIME 40 MINUTES
50g unsalted butter, chopped1 tablespoon extra virgin olive oil, plus extra for drizzling1kg brown onions, sliced thinly2 cloves garlic, crushed1 tablespoon brown sugar1 tablespoon Dijon mustard2 tablespoons balsamic vinegar4 sprigs thyme, plus extra to serve2 tablespoons plain flour1 litre beef stock250g store-bought potato gnocchi1 cup (120g) coarsely grated gruyere cheese⅓ cup (40g) coarsely grated mozzarella cheese
1 Heat the butter and oil in a large, heavy-based saucepan over medium high heat. Add the onions and season with salt and freshly ground pepper. Cook, stirring constantly, for 20 minutes or until light golden. Add the garlic, sugar, mustard, vinegar, thyme and flour; cook, stirring constantly, for 1 minute until onions are well-coated.
