Indian Chicken and potato tray bake
SERVES 4-6 PREP & COOK TIME 1 HOUR 10 MINUTES
50g butter or ghee, melted 3 medium (600g) Sebago potatoes, scrubbed, chopped into 3cm pieces 1 large (200g) onion, chopped coarsely 1 tablespoon finely grated ginger 2 cloves garlic, crushed 1 teaspoon garam marsala 1 teaspoon each ground cumin and ground coriander 2 tablespoons finely chopped coriander stalks 2 tablespoons lemon juice 6 large chicken drumsticks 3 medium (250g) Roma tomatoes, quartered 3 sprigs fresh curry leaves toasted roti, natural yoghurt, eggplant pickle or mango chutney, for serving 1 Preheat oven to 220°C (200°C fan-forced). Line a large shallow baking dish with baking paper.
