I’ve been a GP for more than 30 years, during which time I have seen a lot of change. Some good, some bad. One of the most striking changes has been a dramatic increase in the average patient’s waist size, as well as a doubling in rates of type 2 diabetes. Most people are aware of the link between waist size and the risk of chronic diseases, like heart disease, cancer and diabetes, but it has taken the arrival of COVID-19 to inject a new sense of urgency. Remove lamb from the fridge 45 minutes before cooking. This will allow it to cook more evenly. The lamb can also be cooked in a covered barbecue. Soak bamboo skewers in boiling water for 10 minutes before using, to prevent them burning during cooking. Barbecuing prawns gives them a lovely smoky flavour.
