Lamb & apricot stew
• 1onion, chopped • 4medium carrots, cut into 1cm chunks • 1½ kg stewing lamb • ½cup dried apricots, halved • ½cup pitted green olives (optional) • 1clove garlic • 1tbsp cake flour • 1tsp paprika • 1tsp ground cumin • ½tsp ground cinnamon • ½tsp ground ginger • Salt and black pepper to taste Mix the onion, carrots, lamb, apricots, olives, garlic, flour and spices together in your slow cooker, and add half a cup of water. Cover and cook the lamb and vegetables on low for seven to eight hours. Serve with mashed potatoes, rice or couscous.
