Beets by Mexico Stirred down drinks can still be fun, and here the Beetroot and apple cordial (recipe opposite) adds a fruity and savoury edge to an essentially Manhattan-style drink. The mezcal adds an intriguing edge, which makes this drink very much an after-dark sipper. Group serve This can be batched ahead of time and kept in the fridge or the freezer. You can even pre-dilute it. This wire-legged and wood-topped coffee table caught my eye in an op-shop. I liked its mid-century look, but not the ancient condition, so I bought it knowing it was an easy upcycling project. I wanted to make the beautiful floral Resene wallpaper the focal point of the furniture, but I could just as easily have cut out some of the flower shapes and glued them to the Resene Rapture-coloured top for a decoupage effect. Design based on 3.3m x 6m (20sqm) When designing your courtyard, consider your style, what you hope to use it for and how much time you have to care for it. Consider the hard landscaping materials and colours. Darker fences, for example, will tend to make the space bigger as they recede. Beetroot & orange salad SERVES 6-8 INGREDIENTS 1 medium red onion ½ cup apple cider vinegar 1 Tbsp caster sugar 1½ tsp salt flakes 2 large navel oranges 200g baby golden beetroot, peeled 200g baby chioggia (candy stripe) beetroot, peeled (or use red beets) ¼ cup fresh orange juice ¼ cup extra virgin olive oil 1 medium radicchio, cut into 3cm wedges 150g goats’ cheese, crumbled 1 cup walnuts, roasted 1 Using a mandoline or V-slicer, slice onion into thin rounds. 2 Combine 1/3 cup of the vinegar, the sugar and salt flakes in a medium bowl; stir until sugar dissolves.
