One of the many things that makes working on this magazine so great is the terrific ideas the homeowners have. It’s also the hardest because I want to do so many of them at my place. Greek salad lamb pita pockets MAKES 4 INGREDIENTS 250g lamb backstraps 1 Tbsp extra virgin olive oil 1 tsp dried oregano ½ tsp ground sumac 4 pita pockets 250g baby cucumbers, sliced thinly into ribbons 2 Roma tomatoes, sliced 1 baby gem lettuce, leaves separated 80g kalamata olives, pitted, halved WHIPPED FETA 200g Danish feta 1 cup mint leaves 2 Tbsp lemon juice 1 Tbsp extra virgin olive oil 1 Place lamb in a small bowl. Peach and yoghurt upside-down cake SERVES 9–12 INGREDIENTS 2 cups caster sugar 165g unsalted butter, chopped and softened ¼ cup bourbon or orange juice 3 eggs 1 Tbsp finely grated orange rind 1 cup fine polenta ¾ cup caster sugar, extra 1 cup Greek yoghurt 1½ cups almond meal 1½ tsp baking powder 4 medium peaches, halved, stones removed, sliced thinly 1 Preheat oven to 180°C. FRONTAGE The home was reclad in brand new weatherboards and painted in Resene Sea Fog. Using the existing rotted and broken pieces as a guide, the couple sourced new fretwork and balusters from Bungalow & Villa to revive the frontage. BEACH BOOTY You can also use the shells to store small, loose items. Shell be right Decorate mussel shells with pretty paper and gold leaf and use them at your next dinner party as salt and pepper pots. 1 PAPER PASSION Print a design on white paper and cut it out to match the size of the mussel shell. Use Mod Podge or another clear-drying glue to stick the picture to the inside of the shell. Red wine marinated sausages & herb salad rolls MAKES 6 INGREDIENTS 1 cup red wine 2 Tbsp brown sugar 1 Tbsp red wine vinegar 2 cloves garlic, crushed 4 bay leaves 1 Tbsp coriander seeds 1 Tbsp cumin seeds 6 thick beef sausages, split lengthways 6 long rolls, split lengthways 30g butter, softened 1½ Tbsp English mustard HERB SALAD 2 spring onions, sliced ½ cup flat-leaf parsley, torn ½ cup chervil leaves, torn 2 tsp red wine vinegar 2 tsp extra virgin olive oil 1 Combine wine, sugar, vinegar, garlic, bay leaves and seeds in a large shallow dish.
