◗ 250ml (1c) quinoa, rinsed ◗ 500ml (2c) water ◗ 2 rooibos teabags ◗ 250ml (1c) halved cherry tomatoes ◗ 1 cucumber, diced ◗ 1 bell pepper (any colour), diced ◗ ¼ red onion, thinly sliced ◗ 60ml (¼c) each chopped fresh parsley, chopped fresh mint leaves and chopped toasted almonds ◗ juice of 1 lemon ◗ 30ml (2T) extra virgin olive oil ◗ salt and pepper ◗ pomegranate seeds◗ extra chopped herbs or lemon wedges, optional, to serve
