PEA & HAM SOUP
SERVES 4-6 / PREPARATION: 20 MINS / COOKING: 2 HRS 15 MINS
◗ 15ml (1T) olive oil◗ 2 onions, chopped◗ 2,5L water◗ 1 ham hock (about 800g)◗ 500g dried green split peas, rinsed, drained◗ 2 bay leaves◗ 3 stalks celery, diced◗ 2 carrots, peeled, diced◗ 2 parsnips, peeled◗ 125ml (½c) parsley leaves◗ salt, to taste 1 In a large saucepan, heat the oil on medium. Sauté the onions for 4-5 minutes until soft. Add the water, ham hock, split peas and bay leaves.
2 Bring to a boil, then cover and simmer for 1 hour. Remove the lid. Simmer again for 30 minutes. Remove the ham.
3 Add the celery, carrots and one parsnip (diced). Simmer for 40-45 minutes until the vegetables and peas are tender.…
