ZA’ATAR LAMB SKEWERS with WHIPPED FETA

◖1T dried thyme leaves◖2T sesame seeds, lightly toasted◖2T sumac◖½t sea◖salt flakes LAMB SKEWERS
◖700g lamb back-strap (loin), cut into chunks◖2T chopped origanum leaves◖2t finely grated lemon rind◖4 cloves garlic, crushed◖2T extra virgin olive oil◖1T za’atar, plus extra◖sea salt and freshly ground black pepper◖200g soft feta◖½c (125ml) plain thick yoghurt TO SERVE
