CHEAT’S POKE BOWL

FISH
• 250g fresh trout, salmon or tuna, skinned, deboned and cubed• 15ml (1T) teriyaki sauce• 5ml (1t) soy sauce• 15ml (1T) lime juice or rice vinegar BOWLS
• 750ml (3c) cooked jasmine or sushi rice• 1 cucumber, cubed• 4 carrots, peeled and cut into strips• 2 spring onions, sliced• 100g gem lettuce• 1 avocado, sliced• 60ml (¼c) pickled ginger• fresh herbs• 30ml (2T) toasted sesame seeds 1 Fish Mix all the ingredients together and set aside.
2 Bowls Spoon a heap of the rice in the middle of each bowl.
3 Arrange the fish, cucumber, carrots, spring onions, letuce, avocado, ginger and herbs in and around the rice.
