CRUMBED LIVERS WITH PINEAPPLE SALSA SERVES 4 Preparation: 20 min Chilling: 30 min Cooking: 15 min LIVERS 500 g chicken livers, cleaned and rinsed salt and freshly ground pepper 5 ml (1 t) ground cumin 2 ml (½ t) ground coriander 125 ml (½ c) flour 2 eggs 60 ml (¼ c) milk 250 ml (1 c) breadcrumbs oil for deep-frying SALSA 1 pineapple, cut into sticks 1 cucumber, diced 1 Pat the livers dry with paper towels.
