Salmon Burgers

1 large egg1 lb skinless salmon fillet, finely chopped2 scallions, chopped1 jalapeño, finely chopped3 Tbsp cilantro, chopped, dividedKosher salt and pepper1 Tbsp olive oil½ cup Greek yogurt1 tsp lime zest plus 2 Tbsp juice4 brioche buns, toasted8 Bibb lettuce leaves2 Persian cucumbers or ½ English cucumber, shaved lengthwise2 cups broccoli or radish sprouts
1. In medium bowl, beat egg until frothy. Fold in salmon, scallions, jalapeño, 2 Tbsp cilantro, ½ tsp salt, and ¼ tsp pepper.
2. Heat oil in large nonstick skillet on medium. Spoon 4 mounds of salmon mixture (about ½ cup each) into skillet and flatten into ½-in.-thick patties. Cook until golden brown, 2 min. per side.
