Spiced clementine gammon The perfect seasonal roast – delicious served hot or cold. SERVES 16 PREP 10 MINS COOK 2 HOURS • 2.5kg smoked boneless gammon• 1 onion, quartered• 1 carrot• 1 bay leaf• 5 cloves• 1tsp black peppercorns• 500ml cider• 2tbsp runny honey• 2tbsp wholegrain mustard• Few clementine slices 1 Put the gammon in a very large pan. Add the onion, carrot, bay leaf, cloves, peppercorns, cider and enough water to cover the ham. Bring to the boil then simmer, covered, for 1 hr 30 mins.
