Giant couscous, courgette and halloumi salad  Deliciously simple combination that really works SERVES 4 PREP 15 MINS COOK 30 MINS • 200g giant couscous• 4tbsp olive oil, plus extra for frying• 500g courgettes, sliced• 500g halloumi cheese, sliced• 2tbsp red wine vinegar• 1tbsp Dijon mustard• 1tsp caster sugar• 75g rocket leaves 1 Put the couscous in a pan, cover with boiling water, return to the boil and simmer for 6 mins until tender. 2 Heat a large frying pan, add a little olive oil and fry the courgette slices, turning occasionally, for 5 mins until golden and tender.
