Lamb saag
SERVES 4 READY IN 1 HOUR
* 700g lean lamb leg steaks, visible fat removed, cut into bite-sized chunks
* 2 onions, finely chopped
* 3 garlic cloves, finely chopped
* 4cm piece of root ginger, peeled and finely grated
* 1 red chilli, deseeded and finely chopped, plus extra to garnish
* 4tbsp curry powder (heat level to your taste)
* 750ml boiling lamb or chicken stock
* 1 cinnamon stick
* 2 cardamom pods, crushed
* Salt and freshly ground black pepper
* 400g baby spinach leaves, roughly chopped
* Lime wedges, to serve
