A Healthy immune function depends on adequate intakes of most vitamins, minerals and essential fatty acids, particularly omega 3. Recognising this, the European Food Safety Authority (EFSA) has authorised nutrient function health claims for vitamins A, B6, folate, B12, C and D, and minerals zinc, selenium, iron and copper, based on scientific assessment of their roles in normal immune system function. For example, high doses of vitamin C have been shown to stimulate white blood cell activity, preventing oxidative stress damage, protecting against infection, including pneumonia and upper respiratory tract infections. Similarly, studies show that the active form of vitamin D given as a supplement helps to restore the immune function of white cells, reducing the risk of acute respiratory tract infection.
