Derek Fox Butchers, 25 Market Place, Malton
There’s not much Derek Fox doesn’t know about butchery, having worked in his family’s shop since the age of six. But the story of his business goes way back to the 1850s, when it was thought to have been established. It was Derek’s grandfather, Jack, who first transformed the ground floor of the old, four-storey family home into a professional butcher’s shop in 1947, removing furniture to make way for two great freezers to hang the meat in.
As a youngster, Derek linked sausages in the cellar. By 1955, at the age of 15, he’d become a full-time apprentice. ‘I’ve been a butcher as long as I can remember,’ says Derek. ‘But I learnt it from the bottom up.’
