Lentil, walnut and veggie stew
Walnuts are high in fibre and a great source of protein. This meal is perfect to batch cook for a nutritious lunch or dinner.

✱ 1tbsp olive oil✱ 1 onion, chopped✱ 2 carrots, diced✱ 1 red pepper, diced✱ 2 garlic cloves, crushed✱ 3tbsp oats✱ 300g mushrooms, quartered✱ 1tsp dried mixed herbs✱ 75g walnuts, roughly chopped✱ 400g can chopped tomatoes✱ 400g can lentils✱ 500ml vegetable stock✱ Parsley, chopped, to serve (optional) 1 Heat the oil in a saucepan and fry the onion, carrot and pepper for 5 mins. Stir in the garlic, oats, mushrooms, herbs and walnuts and fry for 1-2 mins.
