Ultimate Greek salad

YOU WILL NEED
200g orzo pasta ½ red onion, sliced 3tbsp lemon juice 150g broad beans, podded and peeled 250g baby plum tomatoes, halved ½ cucumber, deseeded and chopped 4tbsp olive oil 2tbsp fresh mint 1tbsp fresh oregano 200g feta, crumbled
HOW TO DO IT
1 Cook the orzo to pack instructions, drain and cool. In a bowl, mix onion with 1tbsp lemon juice and a pinch of salt to soften.
2 Mix the orzo, onion, broad beans, tomatoes and cucumber in a large bowl. Whisk together the oil, remaining lemon juice and herbs, toss through the salad and serve with the feta.
