TOMATO, BACON & AVOCADO PASTA SALAD
SERVES 6 PREP 15 MINS COOK 5 MINS
• 250g orecchiette pasta
• 200g short cut bacon, thinly sliced
• 2 x 200g punnets heirloom tomatoes, halved
• 2 small avocados, roughly chopped
• 1 small red onion, thinly sliced
• ½ bunch fresh chives, cut into 2cm pieces
• 60g baby rocket leaves
• ½ cup bottled creamy ranch dressing
1 Cook pasta in a large saucepan of boiling, salted water until tender. Drain. Rinse under cold water. Drain well. Transfer to a large bowl.
2 Meanwhile, heat an oiled, non-stick frying pan over a medium-high heat. Add bacon. Cook, stirring for about 5 mins, until crisp. Drain on paper towel.
