MEATBALLS WITH LENTILS & TOMATO SUGO

⢠250g pork mince
⢠250g beef mince
⢠70g breadcrumbs
⢠100g brown onion, grated coarsely
⢠1 clove garlic, chopped finely
⢠1 free-range egg, beaten lightly
⢠2 tbsp fresh basil, chopped
⢠2 tbsp parsley, chopped, plus extra to garnish
⢠¼ cup (60ml) extra virgin olive oil
⢠500g jar tomato sugo (pasta sauce)
⢠400g can lentils, drained
⢠40g parmesan
1 To make the meatballs, place the pork mince, beef mince, breadcrumbs, onion, garlic, egg, basil and parsley in a large bowl. Season with salt and pepper. Use clean, wet hands to mix until well combined.
