CHICKEN TAGINE
SERVES 4 PREP 15 MINS COOK 1 HOUR
• 1 tbsp olive oil
• 1 tbsp Moroccan spice blend
• 1.6kg chicken, segmented
• 2 tomatoes, chopped
• 1 onion, sliced
• 2 potatoes, peeled, small chunks
• 2 zucchini, chopped
• ½ cup black olives
• 1 cup chicken stock
• 1 tbsp preserved lemon, thinly sliced
• 25g baby spinach leaves
• natural yoghurt, harissa paste, to serve
1 Heat a heavy-based, deep frying pan over a high heat. Rub combined oil and spice blend over chicken. Brown 4-5 mins, turning. Transfer to plate.
2 Spread tomato and onion over base of pan. Place chicken pieces on top with potato and zucchini. Push olives into gaps. Pour stock over. Scatter lemon over.
