CHEESY CHORIZO & PUMPKIN PIES MAKES 8 PREP & COOK 1 HOUR 20 MINS • 750g diced pumpkin • 2½ tbsp olive oil • 2 chorizo, cut into 1cm cubes • 1 red onion, thinly sliced • 4 garlic cloves, skin on • 1 cup grated cheese • 1 lemon, zested • 1 tsp chilli flakes (optional) • ½ cup parsley leaves, roughly chopped • 8 sheets shortcrust pastry • 1 egg, beaten 1 Line two large oven trays with baking paper. Place pumpkin on one tray. Drizzle with 1½ tbsp oil, toss to coat and season with salt and pepper. Cavolo nero rigatoni Compiled by Amber Bramble. A warming pasta recipe by London chef Thomas Straker SERVES 4 Bring a large pot of salted water to the boil. Blanch 500g cavolo nero (coarse stalks removed) and 3 garlic cloves (peeled and bashed with the side of a blade) in the water for 3 mins, then transfer to a blender with a little of their cooking water. Blend to make a smooth puree, then add 150ml of your best extra-virgin olive oil and blend again. Season generously to taste with sea salt flakes and freshly cracked black pepper. Peter Rye believes life’s greatest joys come by chance – and his rolled in on four wheels!
