BRIOCHE CINNAMON PECAN PUDDING SERVES 6 PREP 30 MINS COOK 1 HOUR • 60g butter, softened • 400g loaf brioche, cut into 2.5cm-thick slices • ½ cup orange marmalade • ½ cup pecans • 2 tsp ground cinnamon • icing sugar mixture, vanilla ice-cream, to serve CUSTARD • 6 eggs, at room temperature • ½ cup caster sugar • 2 tsp vanilla extract • 3½ cups milk • 300ml tub thickened cream 1 Grease an oval ovenproof dish (9-cup capacity). 2 Spread butter over one side of brioche slices.
