ZUCCHINI CARBONARA BAKES MAKES 4 PREP 15 MINS COOK 25 MINS • 375g fettuccine • 1 tbsp olive oil • 4 rashers rindless bacon, thinly sliced • 1 onion, finely sliced • 4 garlic cloves, crushed • 2 large zucchinis, peeled into ribbons • 5 eggs • ¾ cup pure cream • ½ cup grated parmesan, plus ½ cup extra • 1 tbsp thyme leaves, plus extra sprigs to serve 1 Preheat oven to 180°C. Cavolo nero, garlic & chilli pizza This recipe from Julia Busuttil Nishimura is suitable for vegetarians MAKES 1 PIZZA Preheat oven to 230°C. In a medium bowl, place 6 small cavolo nero leaves and drizzle with 1 tbsp extra-virgin olive oil. Season with sea salt and use your hands to gently massage the oil into the leaves. Set aside. Place a Toscano Classic pizza base onto a pizza or baking tray. Scatter with 2 tbsp coarsely grated provolone and 1 tbsp grated pecorino and top with 100g roughly torn buffalo mozzarella. Add zest of half a lemon, 1 very thinly sliced garlic clove and 1-2tsp, Calabrian crushed chilli in oil. Bake in preheated oven 4 mins.
