ZUCCHINI, PEA & HALOUMI FRITTERS

• 2 zucchini, grated
• ⅔ cup plain flour, sifted
• ½ cup milk
• 2 eggs, lightly beaten
• 150g haloumi, finely chopped
• ½ cup frozen peas, thawed
• 2 tbsp chopped mint, plus extra leaves, to serve
• 1 lemon, finely grated zest, 1 tbsp juice
• 2 tbsp olive oil
• natural yoghurt, lemon wedges, to serve
1 Squeeze excess moisture from zucchini. Transfer to a large bowl with flour, milk and eggs, whisking to combine. Stir in haloumi, peas, mint, zest and juice. Season to taste.
