BALSAMIC CHICKEN, BEAN & CORN SALAD
SERVES 4 PREP 20 MINS + MARINATING COOK 20 MINS
• 2 tbsp balsamic vinegar, plus extra to serve
• 2 tbsp olive oil, plus extra to serve
• 2 garlic cloves, finely chopped
• 2 chicken breast fillets, trimmed
• 2 corn cobs, husks removed
• 250g punnet cherry tomatoes, quartered
• 125g beans, sliced
• 100g baby spinach leaves
• 1 small red onion, thinly sliced
1 In a shallow dish, combine balsamic vinegar, olive oil and garlic. Add chicken and toss to coat. Marinate 15-20 mins, basting occasionally.
2 Preheat barbecue or chargrill pan on medium. Cook chicken, basting with marinade, turning, 5-10 mins. Cool slightly. Slice and transfer to a bowl.
