CAJUN FISH WITH COUSCOUS
SERVES 6 PREP 10 MINS + CHILLING COOK 20 MINS
• 1kg skinless, boneless white fish fillets
• 2 tbsp Cajun spice mix
• 2 tbsp olive oil
• ½ bunch green onions, thinly sliced
• 2 cups pearl couscous
• 1½ cups water
• 1 cup coconut cream
• 1½ cups frozen peas, blanched
• tzatziki, coriander leaves, lime wedges, to serve
1 Pat fish dry. Toss in Cajun spice and place on a tray. Chill, covered, until ready to cook.
2 In a saucepan, heat half the oil on high. Saute white part of onions for 1-2mins until tender. Add couscous and cook, stirring, 1 min. Stir in water and coconut cream. Boil, uncovered, on low 10 mins until liquid is absorbed.
