As Judy Nunn settles into a comfy chair on the rustic verandah of her NSW Central Coast home, the revered author admits her career has gone full circle. “I was about nine years old when I boldly started to write my first book. ANTIPASTI FRITTATA SERVES 4 PREP 5 MINS COOK 8 MINS • 3 cups marinated antipasti vegetables • 6 eggs • ⅓ cup thickened cream • 100g feta, crumbled • ½ cup chopped walnuts, toasted • ½ cup basil leaves, torn • chargrilled sourdough bread, lemon wedges, to serve 1 Drain vegetables from oil, reserving 2 tbsp. A wholesome dish full of flavour SERVES 4 Place 1 tbsp olive oil, 2 tbsp chopped rosemary and 1 ½ tbsp balsamic vinegar into a large bowl and whisk together, then add 600g lamb shoulder (bone in), skin-side down to marinate for at least 1 hour. Preheat oven to 140°C (fan-forced). Add 2 cloves minced garlic and ½ tbsp salt to the marinade and baste both sides of the lamb. Sit the lamb in a roasting pan, skin-side up. Add chicken stock or water to the base of the pan. Loosely cover with baking paper and foil. Roast in the oven 2 hours, then check for doneness.
