PISTACHIO & MANGO KULFI SERVES 8 PREP 15 MINS • ⅓ cup hot milk • 3 strands saffron (see tip) • 2 x 425g canned mango slices, drained • 395g can sweetened condensed milk • 1 ½ cups thickened cream • ½ cup icing sugar, sifted • ¼ cup pistachios, chopped 1 In a small jug, combine milk and saffron. Fish sauce omelette Start your day with this refreshing dish SERVES 1-2 Beat 2 large free-range eggs in a bowl with 1 tsp fish sauce and ¼ tsp ground white pepper. Heat a small frying pan over medium-high heat. Add 2 tbsp vegetable oil and, when hot, fry the white parts of 1 finely chopped spring onion and ½ finely chopped red chilli a few secs until fragrant. Pour in beaten eggs – they should immediately sizzle in the hot oil.
