SPICY KOREAN MEATBALLS SERVES 4 PREP 10 MINS COOK 20 MINS • 3 Japanese eggplants • 3 medium carrots • 2 green onions • 500g pork meatballs • ¼ cup gochujang paste (Korean red chilli paste) (see Tip) • ⅓ cup honey • 2 tbsp rice-wine vinegar • 1½ tbsp soy sauce • 3 tsp sesame oil • 3 x 200g pkts pre-cooked udon noodles 1 Preheat oven to 220°C. 2 Slice eggplants and carrots into rounds. Drizzle on 2 tbsp extra-virgin olive oil, sprinkle with 1 tsp dried Italian herbs, 1 tsp garlic powder, ½ tsp sea salt, and ½ tsp pepper, and toss to coat.
