Baked white fish Impress your guests with this fancy dish SERVES 4 Preheat your oven to 180°C (160°C fan-forced). Pour 50ml extra-virgin olive oil into a large baking dish, then stir through 125g cherry tomatoes, 80g pitted black olives, a few tbsp capers (in salt or vinegar, well rinsed), 125ml dry white wine and 4-5 anchovy fillets. Add 2 tsp thyme leaves and 3 slices of stale sourdough (cut into chunks) and season with salt. It was mid-September in 2014 and she was turning off her phone ahead of a flight to London when she saw images of the missing toddler across her social media feed. Hoping there would be good news by the time she turned it back on, like so many other Australians she was heartbroken when it became clear over the coming days and weeks that William’s shock disappearance wouldn’t be quickly resolved. The inquest began in March 2019, was adjourned in 2020 due to Covid lockdowns and then delayed when the police began investigating the foster parents and undertook new searches in Kendall. PAINTED HORSES In 1984, six horse trainers tried to pull off a money-making scam by attempting a “ring-in”, a dodgy move where you enter a slow horse into a race with high odds, then swap it for a faster horse to make money. The only problem in swapping Fine Cotton for the faster horse, Bold Personality, was the horses looked nothing alike. Fine Cotton was dark brown with white markings on his legs, while Bold Personality was light brown with no markings. To solve the issue, they bought boxes of hair dye from Brisbane pharmacies – only to find it had turned Bold Personality bright red – and spray-painted white marks on the horse’s legs.
