MAKES 12 Place 375g corn kernels, 2 eggs, 2 chopped green onions, 1 minced garlic clove, 2 tbsp chopped fresh coriander, 2 tsp ground coriander, 2 tsp freshly ground pepper, 2 tsp salt, ½ cup plain flour, ½ cup polenta or corn flour and ¼ tsp baking powder in a bowl and mix until combined and still slightly lumpy. MAKES ABOUT 250G To make almond ricotta, place 400g almonds (no skins, soaked in cold water overnight), 220ml water, 100g coconut cream and 2 tsp salt in a high-speed blender.
