Smoky quesadillas A scrumptious vegan dish with a bit of spice! SERVES 2 Heat a non-stick frying pan over a medium to high heat with a little olive oil swirled around the pan 1-2 mins before adding 1 flour (or corn for gluten-free) tortilla. Flip tortilla over a couple of times for a few minutes until air pockets form. Sprinkle a handful of grated vegan cheese over tortilla, then top with your chosen ingredients. My favourite is thinly sliced spring onions, a handful of finely chopped cherry tomatoes and black, kidney or pinto beans, (¼ tin spread between 2 tortillas, drained and rinsed). Make sure you don’t overfill tortilla. Sprinkle with a small pinch of smoked paprika and chilli flakes, then season with salt and pepper. Cook about 3-5 mins…
