Cinnamon sugar palmiers Show off your baking skills with this delightful treat MAKES 18 Mix ¾ tsp ground cinnamon, 6 green cardamom pods (seeds ground), and 100g caster sugar. Put 1 tbsp spiced sugar into a small cup, add a pinch of fine sea salt and set aside. Slightly soften 250g all-butter puff or rough puff pastry at room temperature. The aim is to end up with a rectangle about 35 x 25cm with spiced sugar pressed into both sides. Use most of the sugar to generously coat the work surface and sprinkle more on top.
