Spaghetti alla Nerano An easy, refreshing and scrumptious dish! SERVES 4 Slice 6 small zucchinis into very thin rounds using a mandoline (or a very sharp knife). Heat a large pan over a medium-high heat. Add ½ cup extra-virgin olive oil and when it’s hot, add in a third of the zucchini slices. Fry until they are lightly golden, stirring occasionally.
