One-pan ’nduja orzo Full of spice, zest and flavour! SERVES 2 Finely chop 2-3 garlic cloves. Heat 1 tbsp olive oil in a medium-sized saucepan over a medium heat. Add 75-100g of ’nduja (depending on how spicy you like it) and cook until it is “melted”, using the back of your spoon to smoosh it into small pieces. Scrape in garlic and cook, stirring, 30 secs more. Pour in 150g orzo and stir so that each piece gets coated in the garlicky ’nduja oil, then pour in 150ml white wine. Once wine has bubbled away by half, pour in 400ml boiling water and season well, then leave to bubble away 8-10 mins until orzo is just cooked, with a soupy sauce remaining.
