FALAFEL WRAPS

• 400g can chickpeas, drained, rinsed • 250g frozen broad beans, thawed, peeled • ¼ cup plain flour • ¼ cup parsley leaves • ¼ cup mint leaves • 6 green onions, thinly sliced • 1 egg • 2 garlic cloves, crushed • 1 tsp ground cumin • 1 tsp ground coriander • oil for deep-frying • ¾cup baba ganoush • 1 bunch rocket leaves • 2 tomatoes, cut into wedges • 1 small red onion, thinly sliced • 6 Lebanese bread rounds 1 Put chickpeas, beans, flour, parsley, mint, onion, egg, garlic, spices in food processor. Process until almost smooth. Put mixture in bowl. Chill, covered, at least 1 hour.
