LAMB & POTATO BAKE SERVES 4 PREP 15 MINS COOK 1 HOUR •3/4 cup thickened cream • 2 tbsp Dijon mustard • 1.2kg potatoes, peeled, 3mm slices • 500g lamb sausages • 4 tomatoes, 5mm slices • 2 tbsp thyme leaves, plus extra to serve •1/4 cup fresh breadcrumbs •1/4 cup grated cheddar • rocket leaves, to serve 1 Preheat oven to 180°C. 2 In a large bowl, combine cream and mustard. SLOW-ROAST SPICED LAMB SERVES 6 PREP 20 MINS + MARINATING COOK 4 HOURS 45 MINS •1/3 cup lemon juice, plus 1 lemon extra, chunks • 2 tbsp olive oil • 2 garlic cloves, crushed • 2 tsp dried mint • 1 tsp ground cumin • ½ tsp mixed spice • 2kg lamb leg, bone in • 2 cups vegetable stock • 2 red onions, wedges • 800g small kipfler potatoes, whole • steamed beans, mint leaves, to serve 1 In a bowl, combine juice, oil, garlic, mint and spices. Easter Bunny slice Get creative in the kitchen with this scrumptious dessert SERVES 10 Preheat oven to 180°C. Lightly grease and line a 20 x 30cm lamington pan, extending paper at long ends. In a large bowl, cream 200g softened butter and ½ cup caster sugar, using an electric mixer, until light and fluffy. Beat in 1 egg. Stir in 1½ cups sifted plain flour, ¹/ ³ cup desiccated coconut and ¹/ ³ cup milk. Mix until well combined. Press mixture evenly over base of prepared pan. Bake 20-25 mins or until golden.
