SPAGHETTI & MEATBALLS SERVES 4 PREP 15 MINS COOK 10 MINS • 2 tbsp olive oil • 400g packet ready-made Italian beef meatballs • 700g jar tomato passata • ¼ cup white wine • pinch dried chilli • 350g spaghetti • 60g packet baby spinach leaves • ½ cup parmesan, shaved • crusty bread, to serve 1 In a large frying pan, heat oil on high. Cook meatballs, shaking pan occasionally, 4-5 mins until well browned. 2 Add passata, wine and chilli. Bring to a simmer. Cook 4-5 mins until meatballs are cooked through. 3 Meanwhile, in a large saucepan of boiling salted water, cook spaghetti following packet directions until tender. Place 2 large eggs, 75ml milk and 1 tbsp ground cinnamon in a large shallow bowl. Whisk until well combined. Using 8 slices of brioche bread, dip each side of the brioche into egg mixture.
