SPINACH & BACON COB DIP SERVES 8 PREP 10 MINS COOK 10 MINS • 1 cob loaf • 1 tbsp olive oil • 4 rashers streaky bacon, chopped • 280g baby spinach leaves • 4 green onions, sliced • 3 garlic cloves, crushed • 250g spreadable cream cheese • 300ml light sour cream • 1 tbsp lemon juice • 1 bunch chives, finely chopped •1/3 cup grated cheddar cheese • mixed crudite (such as red radish, baby cucumbers, cherry tomatoes, carrot sticks), to serve 1 Preheat oven to 180°C. Line an oven tray with baking paper. 2 Use a serrated knife to slice a lid from top of loaf. Grilled lemon myrtle chicken skewers A refreshing and zesty Australia Day spread complete with a fennel, zucchini and herb slaw! SERVES 4 Soak 8 wooden skewers at least 15 mins in cold water or use metal ones if you have them. In a bowl, combine 2 tbsp olive oil, 1½ tsp 1.6mm-cut dried lemon myrtle, ½ tsp dried chilli flakes, 1 tsp ground cumin, zest from 1 lemon and 2 garlic cloves. Cut 4 large chicken thighs (skinless, boneless) into 3cm pieces and add chicken and some salt and pepper and mix to marinate well. Skewer marinated chicken onto 8 wooden skewers. Combine 2 tsp 1.6mm-cut dried lemon myrtle and 2 tbsp sea salt flakes and store in an airtight container – you will need 1 tsp for this recipe.…
