SWEET CHILLI POACHED EGG SOBA NODDLES SERVES 4 PREP 10 MINS COOK 10 MINS • 270g packet soba buckwheat noodles • 1 head broccoli, cut into florets • 250g sugar snaps, trimmed • 1 tbsp white vinegar • 4 eggs • ¼ cup sweet chilli sauce • 2 tbsp peanut oil • 2 tbsp rice vinegar • 2 tbsp fish sauce • 4 green onions, thinly sliced 1 Cook noodles in a saucepan of boiling salted water 1 min. TOFU HONEY NOODLES SERVES 4 PREP 10 MINS COOK 10 MINS • 2 bunches broccolini, cut in half • 250g snow peas, sliced thickly • 270g dried udon noodles • 2 x 200g packet honey soy tofu, cut into 3cm pieces • 2 tbsp white sesame seeds, toasted 1 In a large frying pan over high heat, add 2 tbsp olive oil. Avocado & prawn fried rice A fresh and flavoursome take on a classic dish SERVES 4 Heat a wok or large non-stick frying pan over a high heat. Add 2 tbsp vegetable oil.
