She’s one bright Sparki AMANDA SAYS Sparki tells me she is about four years old now and has been with Shirley all her life since she was a puppy. CREME CARAMEL MAKES 4 PREP 15 MINS + STANDING COOK 1 HOUR 40 MINS • 3 eggs • ¼ cup caster sugar • 1 tsp vanilla bean paste • ¾ cup milk • 1 cup thickened cream CARAMEL • ¾ cup caster sugar • ¹/ ³ cup water 1 Spray 4 x 200ml-capacity ramekins with cooking oil spray. Place into the bowl of a 5.5-litre slow cooker. 2 CARAMEL In a small saucepan, stir sugar and water over low heat until sugar is dissolved. Bring to boil. Boil, without stirring, for 8-10 mins or until mixture is golden. Divide immediately among prepared ramekins. Ruby chicken This spicy chicken curry is an absolute gem! SERVES 4 Place ½ onion, 3 peeled garlic cloves and 7.5cm piece ginger in a food processor and blend until a smooth paste. Combine 2 tbsp paste with ½ cup Greek yoghurt, 2 tbsp mustard oil, 2 cinnamon sticks, 3 bay leaves, 2 birdseye chillies, 1 tbsp chaat masala, ½ tbsp garam masala and 2 tsp Kashmiri chilli powder and mix well. Transfer half the marinade to a dish and add 4 skinless chicken thigh fillets. Mix to coat evenly and set aside 20 mins.
