Tex-Mex fish Add some spice to your midweek meal! SERVES 4 Cut 500g peeled potatoes into thin slices, rinse under cold water, then pat dry on a paper towel. Heat a heavy-based baking dish in a 220°C oven for about 5 mins. Remove dish from oven, spray evenly with cooking spray. Add potato slices in a single layer and bake at 220°C for 10 mins. Turn potato slices in the dish and return to the oven for a further 10 mins, or until crisp and golden.
