When her daughter was diagnosed with congenital heart disease (CHD), Rebecca Kelly knew firsthand the fight her tiny baby was in for. TOMATO, CHORIZO & SWEET POTATO HOTPOT SERVES 4 PREP 15 MINS COOK 25 MINS • 2 chorizo sausages, halved, thickly sliced • 1 onion, chopped • 1 clove garlic, crushed • 1½ tsp paprika • 2 x 400g cans diced tomatoes • 400g can chickpeas, rinsed, drained • 1 large sweet potato, peeled, chopped • 1 cup water • ½ cup roughly chopped parsley • 1 cup uncooked brown rice 1 Heat a heavy-based saucepan on high.
